Creating Quilts & Food

I spent the day playing with a pile of batik, lovely way to pass the day, sorting and trying to see what might make and interesting combo. Wanting to do a Bento Box quilt next. Sort of like picking out ingredients for a delicious quilt salad! Before I knew it dinner time was upon me and the real Quiltsalad needed fixing. At least I had a plan.... Mexican food for dinner and since we live in the country (ten miles to the nearest grocery store) I needed to be creative when it comes to fixing dinner.....especially now with the price of gas. I had planned Taco's but wanted a bit more to round out the usual condiments so I sauteed a chopped onion and a couple of cloves of garlic in a bit of olive oil till they were brown and then added a can each of black beans, corn, kidney beans, chopped fire roasted canned green pepper, (all drained) plus a can of chopped tomatoes and a tablespoon of chili powder and salt to taste. Let it cook on low while preparing the rest of the meal and served as a side dish with the tacos and it was really really good. This taco's fresh pineapple and a rhubarb crisp made a nice dinner. Best of all the left over vegetables and taco meat went together and will make a really nice chili lunch or dinner tomorrow.
